There are quicker microwave and oven methods for ripening an avocado immediately, but I haven’t tested those methods, and honestly with a fresh dressing like this – it just doesn’t sound appealing to me.

1. Combine Ingredients
In a mini food processor or small blender, combine mayonnaise, ripe avocado, fresh lemon juice, minced garlic, salt, and black pepper. Blend until smooth.
2. Add in Olive Oil
Slowly stream in olive oil until the dressing reaches your desired consistency. If you like it thinner, add a bit more.

Serve immediately or chill in an airtight container for later. You can use this creamy avocado dressing right away, or store it in the fridge.
Storage + Make Ahead Directions
Store in mason jars or any airtight container, covered with a piece of plastic wrap to prevent browning. Be sure to place the plastic wrap directly on the dressing. Keep it chilled and use it within 1-2 days for the best flavor. You can also save one of the avocado pits and throw that right in the jar. That can help give it a little more longevity.
I don’t recommend freezing this salad dressing. The texture would be grainy and just not the same with brown avocado. Use it fresh!
To Make Ahead: Since this dressing is best used within a day or 2 of making it, you can make it ahead within that time frame. Give it a good stir before using.
